John Mathias, co-owner of The Beach House in Ottawa, IL and Pesciolino Osteria in Channahon, IL, is a seasoned restaurateur with a passion for coastal cuisine and seafood. Originally from Philadelphia, he moved to Chicago in the mid-1980s and spent years working in restaurants across the U.S., from Los Angeles to the East Coast, serving in roles ranging from chef to general manager. In 2008, he opened his first solo restaurant and has since launched multiple successful concepts. Inspired by summers spent on the shore with his family, John's love for fresh, flavorful seafood led him to create restaurant experiences that celebrate ocean-inspired menus with a regional twist.

Maura Mathias, originally from Boston and co-owner of both restaurant locations, brings charisma, leadership, and warmth to the guest experience. After running a small restaurant in St. Croix, she returned to the U.S., eventually settling in Chicago where she met John at his first restaurant. Since then, she has played an integral role in their shared ventures as a manager, owner, and highly regarded bartender. Known for her quick wit, welcoming energy, and deep knowledge of sports—especially football—Maura connects with guests in a way that's uniquely her own. A former college basketball athlete and proud mom of two grown children in Chicago, Maura embodies the spirit of hospitality at The Beach House and Pesciolino Osteria.

Chef and Operating Partner Joseph Petrusek brings discipline, creativity, and leadership to the kitchen. A Marine Corps veteran, Joe built his culinary career across Chicagoland in roles including cook, sous chef, and executive chef. He worked alongside John and Maura for five years before taking on a position with the Chicago White Sox hospitality team. When the pandemic interrupted food service, Joe stepped in at Pesciolino and ultimately decided to rejoin the team full time—helping relaunch the next chapter of their restaurant group. Today, he continues to lead with passion and precision, serving up thoughtfully crafted dishes rooted in coastal inspiration. Joe lives locally with his wife Jen and their two children.
